Couscous (Curried Carrot)

Yield: 4 Servings
1 Tablespoon Olive Oil |
1 1/2 Cups Chicken Broth |
1 Small Onion, Diced |
1 Cup Couscous |
1 Or 2 Cloves Garlic, Optional |
1/4 Cup Raisins |
-Chopped |
1 Medium Carrot, Coarsely Grated |
2 Teaspoon Curry Powder, Or Less |

Heat 1 tablespoon of olive oil in a large saucepan over medium-high heat. Add onion and garlic (optional) and cook for 1 to 2 minutes. Sprinkle in curry powder. Stir until fragrant, 1 minute. Add chicken broth and bring to a boil. Stir in couscous, raisins and grated carrot. Remove from heat and cover. Let stand 5 minutes. Fluff with fork. Serve with your favourite meat or fish along with vegetables. Leftovers keep well. Reheat in microwave. Yummy.
