Cookies And Chocolate Chips #2 (Oatmeal)

Yield: 48 Servings

1 1/2 Cups All Purpose Flour 2 Large Eggs, Beaten
1 Tsp Baking Soda 1 Tsp Vanilla Extract
1 Tsp Ground Cinnamon 3 Cups Quick Cooking Oats
1/2 Tsp Salt 1 Cup Semi-Sweet Chocolate Or
1 Cup Butter Or Margarine -Raisins
1 Cup Brown Sugar, Firmly Packed 3/4 Cup Chopped Nuts
1/2 Cup Granulated Sugar

Preheat oven to 325 degree F.
Combine flour, baking soda, cinnamon and salt in medium bowl; mix well. Beat butter and sugars in large bowl with electric mixer until creamy. Add eggs and vanilla; beat well. Add flour mixture; mix well. Stir in oats and, if desired raisins or chocolate; mix well. Drop dough by rounded tablespoons onto ungreased baking sheets.

Bake (top rack) for 10 to 12 minutes or until light brown. Cool on baking sheets for 1 minute; remove to wire rack to cool completely.
