Cookies And Chocolate Chips #2 (Oatmeal)

Yield: 48 Servings
1 1/2 Cups All Purpose Flour |
2 Large Eggs, Beaten |
1 Tsp Baking Soda |
1 Tsp Vanilla Extract |
1 Tsp Ground Cinnamon |
3 Cups Quick Cooking Oats |
1/2 Tsp Salt |
1 Cup Semi-Sweet Chocolate Or |
1 Cup Butter Or Margarine |
-Raisins |
1 Cup Brown Sugar, Firmly Packed |
3/4 Cup Chopped Nuts |
1/2 Cup Granulated Sugar |

Preheat oven to 325 degree F. Combine flour, baking soda, cinnamon and salt in medium bowl; mix well. Beat butter and sugars in large bowl with electric mixer until creamy. Add eggs and vanilla; beat well. Add flour mixture; mix well. Stir in oats and, if desired raisins or chocolate; mix well. Drop dough by rounded tablespoons onto ungreased baking sheets. Bake (top rack) for 10 to 12 minutes or until light brown. Cool on baking sheets for 1 minute; remove to wire rack to cool completely.
