Cookies (ginger)

Yield: 36 Servings
2 1/4 Cups Flour |
3/4 Cup Butter Soft |
2 Teaspoons Ground Ginger |
1 Cup Sugar |
1 Teaspoon Baking Soda |
1 Egg |
3/4 Teaspoon Cinnamon |
1/4 Cup Molasses |
1/2 Teaspoon Cloves |
2 Tablespoons Sugar |
1/4 Teaspoon Salt |

Preheat oven at 350. Combine flour, ginger, baking soda, cinnamon, cloves salt. Set aside. Mix butter with electric mixer 30 seconds (or mix by hand). Add 1 cup of sugar and beat until fluffy. Add egg and molasses and beat. Add half of the flour mixture; beat until combined. Stir in remaining flour with a wooden spoon. Shape into 1 inch balls. Roll each ball into the 2 tablespoon of sugar; place on ungreased cookie sheets 2 inches apart. Bake in the preheated oven for 10 to 12 minutes approx. or until light brown and puffed. Let cool on cookie sheet 2 minutes. Transfer to rack to cool.
