Cookies (Party Shortbread) (Phyllis Recipe)

Yield: 30 Servings
You can use this recipe to make decorated shortbread cookies or pinwheel cookies.
1 3/4 Cups Sifted Flour |
Chopped Nuts Or Cherries To |
1/2 Cup Sifted Icing Sugar |

1 Cup Soft Butter |
Raspberry/Strawberry Jam (pinwheel) |
Sift together flour and icing sugar. Cream butter in another bowl. Mix dry ingredients in butter. Beating well. Roll dough into 1 inch balls. Place on ungreased cookie sheets. Flatten with fork and decorate OR If making pinwheel cookies: Roll dough into 1 inch balls. Dip balls in milk then roll in chopped nuts. Place on cookie sheet and press down in centre of dough to make a well in the middle. Fill with raspberry or strawberry jam (1/2 tsp). Bake at 350 (top rack) 12 to 15 minutes approximately. Let cool a few seconds then gently place on wire rack to complete cooling. Makes 30 cookies
