Chickpea & Red Pepper Salad

Make half for two people

2 Cans Of Chickpeas, Rinsed & -*
-Drained DRESSING
3 Green Onions Or 1/2 Of Red 2 Tablespoons Balsamic Vinegar
-Onion, Chopped 2 Tsp Prepared Mustard
2 Red Bell Peppers, Finely Chopped 2 Tablespoons Vegetable Oil
*********************************** 1 Tsp Dried Basil

In a bowl combine chickpeas with red peppers and green onions.

Dressing; in a small bowl whisk together vinegar, oil, mustard and basil. Drizzle over salad and toss. Refrigerate and serve.

OR

Try this dressing; in a small bowl whisk together 2 tablespoons of Balsamic vinegar, 2 tablespoons of water, 1 tablespoon of oil and 1 tablespoon of maple syrup.
