Chicken Orzo Skillet

Yield: 4 Servings

1 Teaspoon Olive Oil 3/4 Cup Orzo
3/4 Pound Boneless Skinless 1 Cup Shredded Carrots
-Chicken Breasts, Cut Into Strips 1/4 Teaspoon Ground Black Pepper
2 Cups Sliced Button Mushrooms 1 Tablespoon Chopped Fresh Basil
1/2 Cup Chopped Onions -Leaves
2 Cloves Garlic Minced 2 Basil Leaves, Cut Into Fine
1 Can (10 Oz) Low Fat Chicken Soup -Strips
-Or Mushroom Soup 1 Tomato, Diced
2/3 Cup Water

Cook chicken until well browned in heated oil at medium-high in large skillet. Add mushrooms, onions and garlic. Cook and stir for 3 minutes.

Add all other ingredients except for basil strips and tomato. Mix well and bring to boil. Reduce heat.

Cover and simmer for 15 minutes, stirring occasional.

Add basil strips and tomato and stir to combine.
