Chicken Cacciatore

2 Tablespoons Oil (or Less) |
1/2 Tsp Basil |
4 To 6 Pieces Chicken |
1 Can Tomatoes, 28(oz) Mashed |
2 Cloves Garlic, Minced |
1 Can Mushroom, 3 Oz Or More |
1/2 Tsp Salt |
1/4 Cup Cooking Sherry, Or Broth |
1/4 Tsp Pepper |
Parsley |
1/2 Tsp Oregano |

Heat oil and brown chicken. Drain excess oil. Add tomatoes and all other ingredients except sherry (or water) and parsley then simmer for 25 minutes or until tender. Add sherry or water and cook 10 more minutes. Sprinkle with parsley serve with rice.
