California Vim And Vit Salad

Yield: 4 Servings

1 Small Crisp Lettuce, Torn In 2 Tablespoons Sesame Seeds
-Pieces -(Lightly Toasted)
8 Oz Young Spinach Leaves **********************************
2 Carrots, Coarsely Grated VINAIGRETTE
4oz Cherry Tomatoes, Halved 3 Tablespoons Light Olive Oil
2 Celery Sticks, Thinly Sliced 2 Tablespoons Cider Vinegar
1/2 Cup Raisins 2 Teaspoons Clear Honey
1/2 Cup Blanched Almonds Or Juice Of 1 Small Orange
-Unsalted Cashews, Halved Salt And Ground Pepper
2 Tablespoons Sunflower Seeds

1. Put the salad, vegetables, raisins, almonds or cashew nuts and seeds into a large bowl.
2. Put all the dressing ingredients into a screw top jar, shake them up well and pour over the salad
3. Toss the salad thoroughly. Season and serve lightly chilled.
