Cabbage Coleslaw

1/2 Cabbage, Shredded |
1/4 Cup Sugar |
2 Carrots, Shredded |
Salt & Pepper, To Taste |
1 Red Onion, Chopped |
1/2 Teaspoon Prepared Mustard |
1/4 Cup Olive Oil |
1/4 Teaspoon Celery Seed |
1/4 Cup Vinegar |

Prepare cabbage, carrots, red onion and set aside. In small pot combine vinegar, sugar, salt, pepper, prepared mustard and celery seed. Stir over low heat until sugar is dissolved. Remove from heat and add olive oil. Pour over cabbage and mix well.
