Zucchini Marinated Salad

Yield: 4 Servings

2 Large Tomatoes, Sliced 2 Tablespoons Fresh Chopped Parsley
2 Medium Zucchini, Sliced Lettuce Leaves
1 Cup Fresh Sliced Mushrooms 1 Cup Italian Salad Dressing

Combine tomatoes, zucchini, mushrooms, and parsley in a sealable plastic bag or 8 inch square baking dish. Pour dressing over vegetables; toss to coat well. Cover and chill for at least 8 hours, or overnight. Drain and reserve dressing. Serve vegetables over lettuce leaves with reserved dressing.
