Zucchini Bread #2
From Linda's Kitchen
substitute 1/2 of the oil with 1/2 cup of applesauce.
1 3/4 Cups Sugar |
1 1/2 Cups Whole Wheat Flour |
1 Cup Vegetable Oil |
2 Teaspoons Baking Soda |
3 Eggs |
1 Teaspoon Baking Powder |
2 Teaspoons Vanilla |
1 Teaspoon Salt |
2 Cups Zucchini, Shredded |
3/4 Teaspoon Nutmeg |
1/2 Cup Applesauce |
1 1/2 Tsp Cinnamon |
1/3 Cup Orange Juice |
1 Cup Walnuts, Chopped |
1 1/2 Cups All Purpose Flour |
1/2 Cup Raisins (optional) |
Preheat oven to 350 degree. In large bowl, mix sugar, oil, eggs, and vanilla. Beat until well blended. Add zucchini, applesauce and orange juice; stir well. Combine flour with baking soda, baking powder, salt, nutmeg and cinnamon. Add to zucchini mixture; stir well. Add nuts; stir gently to combine. Pour into 2 greased and floured 9 inch loaf pans. Bake for 45 to 50 minutes; till toothpick comes out clean. Let cool in pans 10 minutes. Remove from pans and let cool completely. Yummy!
