Zucchini Bread #2

substitute 1/2 of the oil with 1/2 cup of applesauce.

1 3/4 Cups Sugar 1 1/2 Cups Whole Wheat Flour
1 Cup Vegetable Oil 2 Teaspoons Baking Soda
3 Eggs 1 Teaspoon Baking Powder
2 Teaspoons Vanilla 1 Teaspoon Salt
2 Cups Zucchini, Shredded 3/4 Teaspoon Nutmeg
1/2 Cup Applesauce 1 1/2 Tsp Cinnamon
1/3 Cup Orange Juice 1 Cup Walnuts, Chopped
1 1/2 Cups All Purpose Flour 1/2 Cup Raisins (optional)

Preheat oven to 350 degree.

In large bowl, mix sugar, oil, eggs, and vanilla. Beat until well blended. Add zucchini, applesauce and orange juice; stir well. Combine flour with baking soda, baking powder, salt, nutmeg and cinnamon. Add to zucchini mixture; stir well. Add nuts; stir gently to combine. Pour into 2 greased and floured 9 inch loaf pans.

Bake for 45 to 50 minutes; till toothpick comes out clean. Let cool in pans 10 minutes. Remove from pans and let cool completely.
