Zucchini Bread

Yield: 12 Servings

Substitute 1/4 cup of the white flour for 1/4 of whole wheat flour.

3 Eggs, Lightly Beaten 1 Teaspoon Baking Soda
1 Cup vegetable Oil Or Applesauce, 1 Teaspoon Baking Powder
-Unsweetened 3 Teaspoons Cinnamon
2 Cups Zucchini, Grated 1 Teaspoon Salt
1 3/4 Cups Sugar 3/4 Cup Raisins
2 Teaspoon Vanilla 1 Cup Walnuts Or Pecans, Chopped
3 1/4 Cups Flour

Mix first 5 ingredients. Sift together dry ingredients, combine with zucchini mixture. Add raisins and nuts. Makes 2 loaves. Bake 350 degree for approx. 40 to 45 min., or until a wooden toothpick inserted in the center comes out clean. Let cool 10 minutes. Remove from pans.
