Zucchini & Tomatoes Sautéed

Yield: 6 Servings
3 Tomatoes, (large), Diced |
-Any Other Oil |
1 Medium-Size Zucchini, Cut In Two |
1 Clove Garlic, Smashed And Chopped |
-And Sliced 1/2" Thick |
1 Tsp Basil To Taste |
1 To 2 Tablespoons Olive Oil Or |
Salt & Pepper |
Heat the oil in a non stick frying pan placed on medium to high heat. Add the sliced zucchini to the hot oil and sauté for 2 minutes. Add the tomatoes, the garlic and the basil. Season to taste with the salt and pepper and continue to cook for 3 to 4 minutes, over medium high heat. Transfer the ingredients to a service platter, garnish with the parsley and serve.
