Tzatziki

2 English Cucumbers |
1 Cup Good Quality Plain Yogurt |
1 Tablespoon Lemon Juice |
1 To 2 Cloves Of Garlic, Crushed |
Coarsely grate the unpeeled cucumber onto a double thickness of paper towel, and squeeze out as much moisture as you can. Put the cucumber into a bowl and toss with the remaining ingredients. If you want to do this a day ahead, extra time in the fridge will allow flavors to blend.
