Tomato (Fresh) Basil Sauce

Yield: 4 Servings
Good served on your favorite pasta.
2 Pounds Plum Tomatoes (fresh) |
1/4 Cup Olive Oil |
1/2 To 1 Can Tomato Paste |
1/4 Cup Basil (fresh), Chopped |
1 Onion (medium), Minced |
Salt & Pepper, To Taste |
3 Cloves Garlic, Minced |

Fill a bowl with boiling water, cut a slice down the side of each tomato (just deep enough to cut the skin) and plunge them into the water for about a minute. When you take them out, the skin should come off easily. Once's peeled, seed and cut the tomatoes. In a medium saucepan, cook tomatoes, tomato paste and basil over medium-low heat until tomatoes are soft. Meanwhile, in a medium skillet, sauté onion and garlic in olive oil until onions are translucent. Add onion mixture to tomato mixture and add salt and pepper. Let simmer on low heat for about 2 hours or until thick.
