Sweet Potato Oven Fries

2 Sweet Potatoes (1 1/2 Pounds), 2 Cloves Garlic (optional), Minced
-Scrubbed, Cut Into 1/2 Inch-Wide 1/2 Teaspoon Each Dried Sage, Sea
-Strips -Salt And Pepper, Or Dried Italian
2 Tablespoons Canola Oil Or Olive -Herb Seasoning
-Oil

Cut each potato into about 1 inch thick slices. Cut each slice lengthwise into about 1 inch thick strips; place in large bowl. Add oil, garlic, sage, salt and pepper; toss to coat well. Spread on large rimmed baking sheet; bake in 425 degree F oven for 15 minutes to 30 minutes.
