Sweet Potato (Roasted) And Spinach Salad

Makes 4 to 6 servings. Good recipe if you have arthritis.
1 Lb Sweet Potatoes (500G), Peeled |

BASIL MAPLE DRESSING: |
1 Tablespoon Olive Oil |
1/3 Cup Olive Oil |
Salt & Pepper |
3 Tablespoons Cider Vinegar |
4 Handfuls Baby Spinach Leaves |
1 Tablespoon Maple Syrup |
1/2 Cup Sliced Almonds, Toasted |
2 Tablespoons Chopped Fresh Basil |
1/2 Cup Dried Cherries Of |
1 Garlic Clove |

Line a large baking sheet with parchment paper. Preheat oven to 375 F. Toss sweet potato, oil, salt and pepper on prepared baking sheet. Roast for about 50 minutes or until tender and golden; cool slightly. To make the dressing, place all the BASIL MAPLE DRESSING ingredients in a blender and blend until smooth. Toss sweet potatoes with dressing and remaining ingredients (spinach, almonds and cherries) in a large bowl. Serve immediately.
