Sun-Dried Tomato Vinaigrette

2 Tablespoons Sun-Dried Tomatoes, |
1 Teaspoon Dijon Mustard |
-Finely Chopped |
1 Clove Garlic, Minced |
2 Tablespoons Balsamic Vinegar Or |
Salt And Pepper To Taste |
-Red Vinegar |
1/3 Cup Olive Oil |
In small bowl, whisk together tomatoes, vinegar, mustard, garlic, salt and pepper; gradually whisk in oil. Makes about 1/2 cup. Put in fridge.
