Sugar Snaps Peas

Yield: 4 Servings

2 Teaspoons Olive Oil 1/8 Teaspoon Salt
3/4 Pound Sugar Snap Peas 1/8 Teaspoon Pepper
3 Green Onions Or Red Onion, 1 Tablespoon Chopped Fresh Mint
-Chopped -(optional)
1 Clove Garlic, Chopped

Heat oil in a large skillet over medium heat. Add sugar snap peas, green onion or red onion, and garlic. Season with salt and pepper. Stir-fry for 4 minutes, then remove from heat and stir the mint leaves in if using.
