Strawberry Rhubarb Crumb Pie

Yield: 8 Servings
1 Egg |
1 Pie Crust, 9" Unbaked |
1/4 Cup Flour |
TOPPING |
1 Teaspoon Vanilla |
3/4 Cups Flour |
3 Cups Rhubarb, Cut In 1/2 Inch |
1/2 Cup Brown Sugar, Packed |
-Pieces |
1/2 Cup Rolled Oats |
1 Pint Strawberries, Fresh Halved |
1/2 Cup Butter Or Margarine |
In mixing bowl beat egg. Beat in sugar, flour & vanilla. Mix well. Gently fold in rhubarb & Strawberries. Pour into pie shell. For topping: combine flour, brown sugar & oats in a small bowl; cut in butter or margarine until crumbly. Sprinkle over fruit. Bake at 400 degrees for 10 minutes, then reduce heat to 350 degrees, bake for 35 minutes or until golden brown & bubbly.
