In a large saucepan melt butter over medium heat. Add onion and cook 5 minutes or until soft. Add spinach and cook, covered, for about 10 minutes longer. Sprinkle flour over mixture. Blend well. Add stock, bay leaf and parsley; cook, uncovered, for about 15 minutes longer. Remove and discard bay leaf. Pour in blender and puree.
