Spinach Soup

Yummy

1 Tablespoon Butter 2 Cups Stock (chicken Or Vegetable)
1/2 Medium Red Onion, Chopped 1 Bay Leaf
1 Package 10 Oz Fresh Spinach, 2 Tablespoons Chopped Parsley
-Washed, Coarse Stem Removed 1 Cup Milk
2 Tablespoons Flour Salt & Pepper To Taste

In a large saucepan melt butter over medium heat. Add onion and cook 5 minutes or until soft. Add spinach and cook, covered, for about 10 minutes longer. Sprinkle flour over mixture. Blend well. Add stock, bay leaf and parsley; cook, uncovered, for about 15 minutes longer. Remove and discard bay leaf. Pour in blender and puree. Stir in milk and add salt and pepper to taste
