Spaghetti Sauce (meatless) With Spinach

I usually break up the canned tomatoes with my finger before adding to the pot.
1 Onion, Chopped |
1 Cup Red Wine |
1 Whole Head Of Garlic, Sliced |
1 Tablespoon Oregano |

1 Bay Leaf |
1 Splash Of Olive Oil |
1/2 Teaspoon Salt |
1 28 Ounce Can Whole Tomatoes |
Baby Spinach To Taste |
5.5 Ounce Can Tomato Paste |

Sauté onion and garlic in a splash of Olive oil. Add tomatoes, tomato paste and wine let simmer 5 minutes. Add oregano, bay leaf, salt, simmer another 20 to 25 minutes. Meanwhile cook pasta in lots of salted water (I use bow tie pasta noodles). Drain pasta add sauce and then lots of baby spinach. Don't forget to remove bay leaf. Yummy!
