Rhubarb Cinnamon Cake

Yield: 8 Servings
2 1/4 Cups Flour |
1 Cup Brown Sugar |
1 Tsp Baking Soda |
1 1/2 Cup Rhubarb, Diced |
1 Tbsp Baking Powder |
TOPPING |
1 Cup Buttermilk Or Plain Yogurt |
1 Tsp Cinnamon |
1/4 Cup Vegetable Oil Or Butter, |
1/3 Cup Brown Sugar |
-OR 1/4 Of Applesauce |
2 Tbsp Vegetable Oil Or Melted |
1 Egg |
-Butter |
Mix dry ingredients into a large bowl. Beat egg and add buttermilk (or yogurt), brown sugar, oil (or butter) stir into dry ingredients just until combined (do not over mix) fold in rhubarb. Put into a greased 9x9 baking dish OR use a bunt pan. Combine topping ingredients and sprinkle on top of cake. Bake at 350F 40-45 minutes until done
