Relish

Ingredients should be picked the night before for freshness. I buy them at a farmer's market. The relish is delicious on hot dogs and hamburgers.

1 6 Quart Basket Of Small -Before)
-Cucumbers, Or 12 Medium Size 1/3 Cup Coarse Salt
-Cucumbers (6 Lbs) 5 Cups Sugar
1 Dozen Medium Size cooking Onions 6 Cups Cider Vinegar
-(3 Lbs) 2 Tsp Turmeric Powder
2 Green Peppers (picked Night 1/4 Cup Mustard Seeds
-Before) 30 Whole Gloves
2 Red Bell Peppers (picked Night 1 Tsp Ground Gloves


In a large roasting pan grind together cucumbers, onions, peppers then mix in salt . Leave overnight. Drain in cheese cloth over strainer (about 2 hours). Put back in roasting pan and mix in vinegar, sugar, turmeric powder, mustard seeds, whole gloves and ground clove. Cook until soft about 15 minutes (boil at medium heat).

Put in sterilized jars and lids.

Makes approximately

16 jars (1 cup) or
8 to 10 jars ( 2 cups)
