Pumpkin Pie

This recipe make about 3 medium pies.
1 (28 Ounce) Pure Pumpkin Filling |
Pinch Of Ground Cloves |
1 1/4 Cups Brown Sugar |
1 Tsp Salt |
3/4 Tsp Ground Ginger |
4 Eggs (whites Separated) |
1 1/2 Tsps Cinnamon |
2 1/3 Cups Milk Or Evaporated Milk |
2/3 Tsp Ground Nutmeg |
3 Uncooked Pie Shells |
Mix together in a large bowl pumpkin filling, brown sugar, ginger, cinnamon, nutmeg, cloves, salt, egg yolks and milk. In a medium bowl beat egg whites with electric beater until stiff peaks form. Fold egg whites into pumpkin mix. Blend well. Bake in 425 degree oven for 10 to 15 minutes then 350 degree for 30 to 35 minutes. If crimped edge browns too fast, cover with foil. Pies are done when a knife inserted in the pie comes out clean.
