Pork Roast

Boneless Pork Roast |
1/3 Cup Mustard |
Canola Oil |
1 Cup Water |
2/3 Cup Maple Syrup |

Preheat oven to 400 degree. Rub roast with Canola oil and place in shallow pan. Mix maple syrup with mustard and pour over roast. Add water to the pan and bake uncovered in a 400 degree oven for 30 minutes per pound basting every 20 minutes with pan juices. Add more water as needed to keep pan drippings from burning. Meat is done when thermometer reads 160 degree. Let rest 10 minutes before serving.
