Peppers (Stuffed With Ground Beef)

Yield: 6 Servings

To speed the cooking process, microwave the peppers for a couple of minutes before filling.

6 Green Or Red Peppers 1/4 Teaspoon Pepper
2 16 Ounce Cans Tomato Sauce 1 Medium Onion, Chopped
1 1/2 Cups Water 1 Lb Lean Ground Beef
1 Cup Rice 1 Tsp Each Oregano, Cumin, Chili
1 Teaspoon Salt -Powder Or To Taste, (optional)

Remove tops from peppers; wash and seed.
Pour 1 can of tomato sauce and 1/2 cup of water in bottom of a 2 quart casserole dish; set aside.
In a bowl combine 1 can of tomato sauce, 1 cup of water, rice, salt, pepper, onion, oregano, cumin, chili powder and beef. Mix well.
Spoon mixture into peppers and place in pan.
Cover and bake in 350 degree oven for 60 to 90 minutes or until rice is tender.
Baste occasionally with tomato sauce in bottom of pan.
