Pasta With White Beans And Small Pasta Shells

Yield: 6 Servings

2 Carrots, Chopped -(kidney Or Other), Drain Beans
3 Celery Stalks, Chopped -And Mash Half Of The Beans
1 Large Onion, Chopped Salt & Pepper (to Taste)
1 Red Bell Pepper, Chopped 1 Cup Small Pasta Shells, Uncooked
1/2 Teaspoon Cumin 1 Box Chicken Or Vegetable Broth
2 To 3 Cloves Of Garlic, Chopped 1 (28 Oz) Can Diced Tomatoes
6 Pieces Of Bacon Grated Romano Or Parmesan Cheese,
Olive Oil -Optional
1 (14 1/2 Oz) Can White Beans

Cook bacon until crisp. Remove and set aside. Add olive oil to same pan and sauté onions, celery, carrots and garlic. Season with salt and pepper. Add beans, bean paste, pasta shells, broth and diced tomatoes. Cook over medium low heat for 20-30 minutes approx.

To serve top with chopped crispy bacon and cheese.
