Pasta With Herbs & Vegetables

Yield: 3 Servings

1 Pkg Fusilli Pasta 1/4 Red Pepper, Cubed
1 Small Head Of Broccoli Mushrooms
250 Grams Asparagus, Or Anything 10 Cherry Tomatoes
-Else Green 1 Small Onion, Diced
3 Cloves Garlic 1/4 Cup Fresh Basil, Finely Chopped
1/4 Cup Parsley, Finely Chopped 1 Tbsp Oregano, Dried
1/4 Cup Sherry, Or Wine Or Chicken Juice Of 1 Lemon
-Broth Olive Oil
1 Tbsp Lemon Peel, Shredded Feta Cheese (optional)
2 Carrots, Julienne

While pasta is boiling, stir fry carrots, broccoli, pepper, asparagus, onion, mushrooms and garlic in olive oil. Cook vegetables till tender. Add cherry tomatoes (optional) and fry for another minute. Add cooked pasta, stir fry a few minutes and add fresh basil, parsley and dried oregano. Add sherry or chicken broth, lemon juice, lemon peel and salt & pepper to taste. Serve and sprinkle with feta cheese if using.
