Muffins (Zucchini)

Yield: 12 Servings

Suggestion: Add chocolate chips.

1/3 Cup Butter Or Canola Oil, Melt 2 Tablespoons Wheat Germ
-Butter 1/2 Teaspoon Cinnamon
1/3 Cup Sour Cream 1 Teaspoon Baking Soda
3/4 Cup Sugar 1 Teaspoon Baking Powder
2 Eggs 1/2 Teaspoon Salt
1 Teaspoon Vanilla 2 Cups Zucchini, Shredded
1 1/3 Cups All Purpose Flour 1/4 Cup Cranberries Or Raisins
2/3 Cup Whole Wheat 1/4 Cup Walnuts

In a bowl, whisk together melted butter or oil, sour cream, eggs, sugar and vanilla.

In separate bowl, combine flour, baking soda, baking powder, cinnamon and salt. Stir butter mixture along with zucchini into flour mixture, stirring just until moistened. Fold in Chocolate chips, if using.

Bake in centre of 375 oven for about 20 minutes or until golden and tops spring back when lightly touched. Let cool in pan on rack for 5 minutes before removing from pan.
