Muffins (Pumpkin #2)

Yield: 12 Servings

1/2 Cup Butter 1 Teaspoon Baking Soda
3/4 Cup Brown Sugar 1/2 Cup Nuts (optional)
1/4 Cup Honey Or Molasses 2 Teaspoons Cinnamon
1 Egg 1/2 Teaspoon Ginger
1 1/2 Cups Pumpkin Puree 1/2 Teaspoon Nutmeg
1 1/2 Cups Flour 1/4 Teaspoon Ground Cloves

Preheat oven at 375

Mix butter and sugar, add molasses, egg stir in pumpkin. Mix dry ingredients together. Add to wet mixture and mix well. Adjust spices as per your preference. Fold in nut if using.

Put into greased muffin tins and bake for about 20 minutes.
