Muffins (Muesli)

Yield: 12 Servings
1 1/3 Cups Rolled Oats |
1 Cup Whole Wheat Flour |
1 Cup Plain Yogurt |
1 1/2 Teaspoons Baking Powder |
1/2 Cup Liquid Honey |
1/2 Teaspoon Each Baking Soda, |
1 Egg |
-Salt & Cinnamon |
1 Teaspoon Pure Vanilla Extract |
1/2 Cup Walnut Pieces |
1/4 Cup Butter, Unsalted And Melted |
1/2 Cup Each Raisins & Dried |
1/4 Cup Dark Brown Sugar, Packed |
-Cranberries |
Preheat oven to 350 F. In a large bowl, stir in oats and yogurt together. Stir in honey, egg and vanilla. In a small bowl combined melted butter and brown sugar and stir into oat mixture. In a separate bowl, combine flour, baking powder, baking soda, salt and cinnamon and stir into oat mixture. Add nuts, raisins and cranberries. Spoon into a buttered muffin pan. Bake for 25 minutes. Let cool in pan for 15 minutes.
