Muffins (Muesli)

Yield: 12 Servings

1 1/3 Cups Rolled Oats 1 Cup Whole Wheat Flour
1 Cup Plain Yogurt 1 1/2 Teaspoons Baking Powder
1/2 Cup Liquid Honey 1/2 Teaspoon Each Baking Soda,
1 Egg -Salt & Cinnamon
1 Teaspoon Pure Vanilla Extract 1/2 Cup Walnut Pieces
1/4 Cup Butter, Unsalted And Melted 1/2 Cup Each Raisins & Dried
1/4 Cup Dark Brown Sugar, Packed -Cranberries

Preheat oven to 350 F.
In a large bowl, stir in oats and yogurt together. Stir in honey, egg and vanilla. In a small bowl combined melted butter and brown sugar and stir into oat mixture. In a separate bowl, combine flour, baking powder, baking soda, salt and cinnamon and stir into oat mixture. Add nuts, raisins and cranberries.

Spoon into a buttered muffin pan. Bake for 25 minutes. Let cool in pan for 15 minutes.
