Muffins (Bran With Orange & Pecan)

Yield: 12 Servings

2 Cups Natural Bran 1 Cup Chopped Pecans
1 Cup All Purpose Flour 1 Tablespoon Grated Orange Rind
1/4 Cup Wheat Germ 1 3/4 Cups Buttermilk Or Sour milk
2 Teaspoons Baking Soda 1/3 Cup Melted Butter Or Oil
1 Cup Chopped Dates 1/3 Cup Molasses Or Corn Syrup
1/2 Tablespoon Salt

In a large bowl, stir together bran, flour, wheat germ, baking soda, and salt. Add dates, pecans, and orange rind; toss lightly to separate and coat dates. In a small bowl, blend buttermilk, butter, and molasses. Pour over dry ingredients and stir together briefly just until blended. Bake at 375 degree on top rack for 15 minutes or until well rise and firm to the touch.

Makes 12 large muffins
