Muffins (Bran #1)

3 Cups All Bran Cereal, 100% Bran 1 Cup Raisins, Or Any Other Fruit
1 Cup Water, Boiling 2 1/2 Teaspoons Baking Soda
2 Whole Eggs, Beaten Slightly 1/2 Tsp Salt
2 Cups Buttermilk, Or 2 Cup Of 1 Cup Sugar
-Milk + 2 Tbsps Of Vinegar 1 1/2 Cups All Purpose Flour
1/2 Cup Vegetable Oil 1 Cup Whole wheat Flour

In a large bowl mix bran cereal with boiling water stirring to moisten evenly. Set aside until cool, then add eggs, buttermilk, oil and fruit. Blend well. Stir together the soda, salt, sugar and flour, then stir into mixture. You can bake muffins now or refrigerate batter in a tightly covered container for as long as two weeks, baking muffins to your convenience. Stir batter to evenly distribute fruit before using. Bake at 325 for about 20 - 25 minutes.
