Muffin (Bran Cranberry Apple)

Yield: 12 Servings

1 1/2 Cups All Bran Original Cereal 2 Eggs
1 Cups Milk 1/4 Cup Canola Oil
1 Cup All Purpose Flour 3/4 Cup Chopped Frozen
1/2 Cup Lightly Packed Brown Sugar -Cranberries, Do Not Thaw
4 Teaspoons Baking Powder 3/4 Cup Apples (1/4" Cubes),
1 Teaspoon Ground Cinnamon -Unpeeled
1/2 Teaspoon Each Nutmeg And Salt

In medium bowl, combine cereal and milk. Let stand for 2 minutes or until cereal softens. Meanwhile, in large bowl combine flour, sugar, baking powder, cinnamon, nutmeg and salt. Set aside.

Beat eggs and oil into cereal mixture. Add to dry ingredients, stirring only until just combined. Fold in cranberries and apple. Portion batter evenly into 12 non-stick muffin pan cups, lightly coated with cooking spray.

Bake 400 F for 20 minutes or until tops spring back when lightly touched.
