Banana Bread (Chocolate Walnut)

Yield: 16 Servings

Suggestion: try 1/4 cup of chocolate chips and 1/4 dried cranberries.

1/4 Cup Canola Oil Or Melted Butter 1 Cup All Purpose Flour
1/2 Cup Brown Sugar, Lightly Packed 1 Tablespoon Baking Powder
2 Large Eggs 1/2 Teaspoon Baking Soda
3 Large, Very Ripe Bananas, Mashed 1/4 Teaspoon Salt
2 Teaspoons Vanilla Extract 1/2 Cup Chocolate Chips, Semi-Sweet
1 Teaspoon Cinnamon 1/2 Cup Walnuts, Chopped
1 Cup Whole Wheat Flour

Preheat the oven to 350. In a large bowl, beat the Canola oil or butter with an electric mixer until light and fluffy. Beat in the sugar until light. Beat in the eggs, adding one at a time. stir in the banana and vanilla until well incorporated.

Combine the flours with the baking powder, baking soda and salt in a separate bowl. Blend the dry mixture into the wet, using deep strokes, until almost fully combined. Gently fold in chocolate chips and walnuts.

Scrape the batter into a lightly greased 9x5 inch loaf pan; smooth evenly to the edges of the pan. Bake, on the centre rack, for 50 to 60 minutes, or until the top springs back when lightly touched. Let cool in the pan on a rack for 10 minutes. Turn out the loaf and let it cool completely before slicing.
