Just For The Halibut

Yield: 4 Servings

1 Tsp Olive Oil -Chopped
1 Cup Zucchinis, Diced 1/4 Tsp Salt And Pepper
1/2 Cup Onions, Minced 4 Halibut Steaks, About 5 To 6 Oz
1 Clove Garlic, Minced -Each
2 Cups Diced Tomatoes 1/3 Cup Feta Cheese, Crumbled
2 Tablespoons Fresh Basil Leaves,

Heat olive oil in a small saucepan over medium heat. Add zucchini, onions, and garlic. Cook and stir until zucchini is tender, about 5 to 6 minutes. Remove from heat and stir in tomatoes, basil, salt, and pepper.

Rinse fish steaks and pat dry with paper towels. Spray a medium baking pan with non-stick spray and place fish in pan. Spoon 1/4 tomatoes- zucchini, mixture over each fish steaks. Top with feta cheese. Bake at 450 for 12 to 15 minutes, depending on thickness of fish. Serve immediately.
