Banana Bread

Yield: 12 Servings
Raisins can be substituted with chocolate chips, or dates. Reduce sugar.
4 Ripe Bananas |
1/2 Tsp Ground Ginger |
3/4 Cup Sugar |
1 Tsp Baking Soda |
1 Egg |
1/2 Tsp Salt |
1 Tablespoon Canola Oil Or Soy Milk |
1 Cup All Purpose Flour |
1 Tsp Vanilla |
1/2 Cup Whole Wheat Flour |
2 Tsp Cinnamon |
1 Cup Raisins Or Dates, Optional |
1/2 Tsp Nutmeg |
1/2 Cup Nuts, Optional |
Mash bananas in a large mixing bowl. Beat sugar and egg until well mixed and add to mashed bananas. Add oil. vanilla, cinnamon, nutmeg, ground ginger, baking soda, and salt. Mix well. Stir in white and whole wheat flour, raisins, dates and nuts(if using) until mixed. Do not over mix because it will make your bread tough. Bake in 9 x 5 loaf pan (preferably non-stick) that has been sprayed with Pam spray. Bake at 325 degrees for about 1 hour.
